BELLINO & PACINO

The connection between author Daniel Bellino Zwicke and actor Al Pacino enters on Spaghetti Aglio e Olio (Spaghetti with Garlic & Oil), a simple Italian pasta dish, loved by Italian (in Italy) and Italian-Americans alsike. Italian Americans like Italian Cookbook author Daniel Bellino Z, and fellow New York Italian - AL Pacino.

The Pasta Connection
  • Favorite Meal: Daniel Bellino Zwicke wrote in his book Positano the Amalfi Coast Cookbook that Al Pacino's absolute favorite go-to pasta dish is spaghetti aglio e olio (spaghetti with garlic and olive oil).[1, 2, 3]
  • Off-Menu Order: Bellino noted that Pacino would request the simple garlic and oil dish every time he dined at the classic Manhattan restaurant Barbetta, even though it was not listed on their menu. [1, 2]
  • Restaurant Tribute: Pacino's repeated off-menu requests inspired another New York eatery, Serafina, to officially name the dish "spaghetti aglio & olio 'Al Pacino'" on their menu. [1]
If you would like, I can share the simple recipe for Spaghetti Aglio e Olio or details about Daniel Bellino Zwicke's other Italian-American cookbooks.

SPAGHETTI AGLIO OLIO

aka SPAGHETTI alla PACINO

From CHOWHOUND
For more than 50 years, Al Pacino has been synonymous with intense, commanding acting. In films such as "The Godfather," "Scarface," and "Scent of a Woman," Pacino undeniably dominates the silver screen. However, one of his favorite meals is a pasta dish that doesn't read as intense at all. Italian food writer Daniel Bellino Zwicke shared in his book "Positano the Amalfi Coast Cookbook: Travel Guide," (via AllRecipes) that Pacino's Italian dish of choice is, in fact, the rather humble spaghetti aglio e olio.
Italian for "spaghetti with garlic and olive oil," this dish hails from Naples, where it was known as a sort of working man's dish. It comes together super quick, requires few ingredients, and even the most novice cook can nail it. What's more, it's basically a one-pan wonder. First, the garlic (fresh always beats jarred) is sauteed in olive oil with a bit of red pepper for heat. This is then combined with freshly cooked spaghetti and some of its pasta water, before being finished with parsley and grated Parmesan chees
Al Pacino is known to ask for his favorite pasta dish when dining out, even if it isn't on the menu. New York Italian restaurant mainstay Serafina even went so far as to create a menu item specifically to pay homage to Pacino and his affinity for the dish, Spaghetti Aglio & Olio "Al Pacino," which remains a staple on its menu. Its version is a classic rendition finished with Parmigiano Reggiano cheese.
The key to making pasta aglio e olio decadent, rather than just making spaghetti with some garlic, is the starchy pasta water that's added to the cooked pasta and sauteed garlic. Cooking the pasta in an adequate, but not abundant, amount of water ensures the pasta water becomes super starchy. This carb-forward liquid gold is what emulsifies the mixture, letting the garlic and olive oil transform into a creamy sauce. You could also upgrade the dish by using roasted garlic, or even adding pepperoncini peppers for an extra kick. It may just be enough to have you uttering (in an entirely more lighthearted way than originally delivered) "say hello to my little friend" as you tuck in.

AL PACINO & CAPPUCCINO

NEW YORK CITY

"WHAT DOES AL LIKE to EAT" ?

Al Pacino is a big fan of a pasta dish called spaghetti aglio e olio. It’s a Neapolitan dish that features spaghetti noodles, good olive oil, lots of garlic and red pepper flakes for a spicy kick. It goes without saying the pasta dish and the Scarface star have been linked together a lot in recent history.

Al Pacino’s love of Spaghetti Aglio e Olio (Garlic & Oil) also came up in Daniel Bellino Zwicke’s Positano the Amalfi Coast Cookbook: Travel Guide. “When I was the wine director at Barbetta Ristorante in New York City, whenever Al came into the restaurant, he would often ask if we could make him a plate as it wasn’t on the menu,” Zwicke wrote. “Al literally made us an offer we couldn’t refuse, naturally we didn’t, and we always gave Mr. Pacino a plate of his beloved spaghetti aglio olio, just the way he liked it. You’re welcome Al.”

T-Bone Steak ! Al says, "I love a nice T-Bone Steak." And Al likes his steak covered with sautéed onions. He also loves to eat Dover Sole. He likes his Dover Sole sautéed in butter, with a little squeeze of fresh lemon. "So good."

Al loves Italian-American classics, like Spaghetti & Meatballs, Spaghetti in Garlic & Oil, or a simple Spaghetti Marinara. If he has some Eggplant Parmigiana in the frig, he'll eat it straight out of the refrigerator cold. He loves it, and says, "It taste very good ! Cold Spaghetti & Meatballs too. Believe it or not. I love it."

AL'S Favorite Dessert ? Al Loves Ice Cream.

AL PACINO

"BELLINO & PACINO"

Daniel Bellino is an Italian-American author who highlights Al Pacino in his cookbooks, particularly focusing on Italian-American cooking, "Sunday Sauce" (meat-based Red Sauce), and shared Sicilian roots, Bellino's family from Lercara Friddi, Sicily, and Al Pacino - "Believe It or Not" hails from Corleone, Sicily.

Bellino's books, such as Grandma Bellino's Cookbook, discuss recipes like Spaghetti Aglio e Olio, which is noted as a favorite of Al Pacino.

Daniel Bellino's Connection: Daniel Bellino Zwicke is known for writing books about Italian-American life, food, and culture. He features "Sunday Sauce" and mentions Sicilian-American connections.

Daniel writes in his book of the times when he was the Wine Director of Barbetta Ristorante in New York, where Pacino occasionally dined at. When Daniel was taking Mr. Pacino's food order, Al would always ask if the kitchen would make him Spaghetti Aglio e Olio (Spaghetti with Garlic & Olive Oil). "The dish was not on the menu, that why Al asked if we could make us. It was an offer we couldn't refuse," states Bellino. And of course we always made it for Al, and he was a wonderful client to have dining with us." The rest is history, shall we say. Al Pacino's favorite paste was Spaghetti with Garlic & Oil (Aglio e Olio). We know this thanks to Daniel Bellino, who felt with Pacino first hand. Bellino tells this story in his book Sunday Sauce

  • Al Pacino & Pasta: In his book Grandma Bellino's Italian Cookbook - Bellino features a "Spaghetti Aglio e Olio" recipe that he associates with Al Pacino. While Pacino is of Sicilian descent, this specific garlic and oil dish is commonly known as a Neapolitan specialty.
  • Sunday Sauce: Bellino's recipes, often termed "Sunday Sauce alla Bellino alla Pacino," highlight traditional, slow-simmered sauces featuring meat such as meatballs, sausages, and pork braciola.
  • Key Themes: Bellino's work often highlights connections between famous Italian-Americans (like Pacino and Sinatra) and the culinary traditions of New York and New Jersey Italian-American communities.
  • Related Works: Other books by Bellino-Zwicke include Sinatra Sauce: Meatballs & Merriment.
Bellino frequently shares these stories and recipes on his "New York Italian" Instagram and blog, often framing them within the context of classic Italian-American films and culture.

AL APCINO & AGLIO e OLIO

Al Pacino and Aglio Olio you ask? What about it? Well it’s just that Spaghetti Aglio Olio always reminds me of that great fellow New Yorker Sicilian American, the one-and-only Al Pacino from da Bronx. It’s not a big deal, just a wonderful little memory for me. When I was the Wine Director at the famed Barbetta Ristorante on Restaurant Row in New York’s Theater District (where Al often performs on stage), Al Pacino used to come and eat there every now and then. He never wanted anything to fancy, but something that just about all true blooded Italian-American wants, and that dish is Spaghetti Aglio Olio, plain and simple, yet it’s in our blood. That’s what Al wanted and that’s what we gave him, and Al loved it and you will too.

Note: As has already been noted, you can make Spaghetti w/ Garlic & Oil, simply by making the above recipe, and omitting the Anchovies, and you’ll have it just like Al Pacino does.

Enjoy!
